Meatballs with Romesco Sauce
Whole Wheat Spaghetti and Steamed Broccoli
Ingredients
- 1½ lb ground round
- 2 large eggs
- ¼ cup finely chopped onion
- ½ tsp salt
- ½ tsp pepper
- 1 hamburger bun (preferably whole wheat), split and toasted
- 3 Tbsp olive oil, divided
- 1 (12-oz) jar roasted red peppers, drained
- 3 Tbsp sliced almonds
- 1 Tbsp apple cider vinegar
- ½ tsp paprika
Instructions
- Combine beef, eggs, onion, salt, pepper, and 1 crumbled bun half in a large bowl; shape into 18 (1½-inch) meatballs.
- Brown meatballs, in batches, in 1 Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes.
- Process 2 Tbsp oil, remaining bun half, roasted peppers, nuts, vinegar, and paprika in a food processor or blender until smooth.
- Pour sauce over meatballs in skillet. Cover, reduce heat, and simmer 10 minutes or until meatballs are done; serve over spaghetti.
