Meatballs with Romesco Sauce

Whole Wheat Spaghetti and Steamed Broccoli

Ingredients

  • 1½ lb ground round
  • 2 large eggs
  • ¼ cup finely chopped onion
  • ½ tsp salt
  • ½ tsp pepper
  • 1 hamburger bun (preferably whole wheat), split and toasted
  • 3 Tbsp olive oil, divided
  • 1 (12-oz) jar roasted red peppers, drained
  • 3 Tbsp sliced almonds
  • 1 Tbsp apple cider vinegar
  • ½ tsp paprika

Instructions

  1. Combine beef, eggs, onion, salt, pepper, and 1 crumbled bun half in a large bowl; shape into 18 (1½-inch) meatballs.
  2. Brown meatballs, in batches, in 1 Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes.
  3. Process 2 Tbsp oil, remaining bun half, roasted peppers, nuts, vinegar, and paprika in a food processor or blender until smooth.
  4. Pour sauce over meatballs in skillet. Cover, reduce heat, and simmer 10 minutes or until meatballs are done; serve over spaghetti.

Side Dish Ingredients

  • 12 oz whole wheat spaghetti
  • 3 broccoli crowns, cut into spears
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook spaghetti according to package directions.
  2. Steam broccoli in a steamer basket over simmering water 5 to 7 minutes or until crisp-tender. Sprinkle with salt and pepper.
