Parmesan Ham and Potato Casserole
Roasted Carrots and Red Onion
Ingredients
- 8 oz thinly sliced low-sodium deli ham, chopped
- 2 lb red potatoes, sliced
- 1½ cups sliced red onions
- 1½ tsp dried oregano, crushed
- ½ tsp pepper
- ⅓ cup grated Parmesan cheese
- 2 Tbsp extra virgin olive oil
Instructions
- Preheat oven to 350°F. Heat a large ovenproof skillet coated with cooking spray over medium-high heat. Add ham, and cook 3 minutes or until edges begin to brown. Remove from skillet.
- Layer half each of potatoes and onions in bottom of skillet; top with ham, oregano, pepper, and 2 Tbsp cheese.
- Top with remaining potatoes and onions; cover skillet with foil. Bake 35 minutes or until potatoes are tender when pierced with a fork.
- Remove from oven; drizzle with oil, and sprinkle with remaining cheese. Let stand 5 minutes.
Side Dish Ingredients
- 1½ lb carrots, cut into ½-inch pieces
- ¾ cup chopped red onion
- 2 Tbsp olive oil
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 350°F. Combine all ingredients in a bowl; toss. Place on a large foil-lined baking sheet in a single layer.
- Bake 35 minutes or until tender and golden brown, stirring occasionally.
