Parmesan Ham and Potato Casserole

Ingredients

  • 8 oz thinly sliced low-sodium deli ham, chopped
  • 2 lb red potatoes, sliced
  • 1½ cups sliced red onions
  • 1½ tsp dried oregano, crushed
  • ½ tsp pepper
  • ⅓ cup grated Parmesan cheese
  • 2 Tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 350°F. Heat a large ovenproof skillet coated with cooking spray over medium-high heat. Add ham, and cook 3 minutes or until edges begin to brown. Remove from skillet.
  2. Layer half each of potatoes and onions in bottom of skillet; top with ham, oregano, pepper, and 2 Tbsp cheese.
  3. Top with remaining potatoes and onions; cover skillet with foil. Bake 35 minutes or until potatoes are tender when pierced with a fork.
  4. Remove from oven; drizzle with oil, and sprinkle with remaining cheese. Let stand 5 minutes.

  • 1½ lb carrots, cut into ½-inch pieces
  • ¾ cup chopped red onion
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 350°F. Combine all ingredients in a bowl; toss. Place on a large foil-lined baking sheet in a single layer.
  2. Bake 35 minutes or until tender and golden brown, stirring occasionally.
