Surf and Turf Kabobs
Pepper-Jack Cauliflower Mash
Ingredients
- ¾ lb sirloin steak, cubed
- 1 Tbsp Worcestershire sauce
- 2 small red bell peppers, cut into 1½-inch pieces
- ¾ lb peeled and deveined, large raw shrimp
- 1 Tbsp olive oil
- ¼ tsp garlic salt
- ¼ tsp black pepper
- 1½ Tbsp chopped fresh parsley
Instructions
- Preheat grill or grill pan to medium-high heat. Toss together beef and Worcestershire sauce in a bowl.
- Thread beef, bell pepper, and shrimp alternately onto metal or bamboo skewers. Brush with oil; sprinkle with garlic salt and black pepper.
- Grill, covered, 4 minutes per side or until beef is desired doneness. Sprinkle with parsley.
Side Dish Ingredients
- 1 (12-oz) pkg frozen mashed cauliflower (such as Birds Eye)
- ¼ cup shredded pepper-Jack cheese
- ¼ tsp crushed red pepper
Side Dish Instructions
- Cook cauliflower according to package directions. Transfer to a bowl. Stir in cheese and red pepper.
