Ham Macaroni and Cheese

Ingredients

  • 1 (16-oz) pkg elbow macaroni
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 1 (16-oz) pkg diced ham, drained
  • 2 Tbsp all-purpose flour
  • 3 cups milk
  • 1 Tbsp yellow mustard
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 (8-oz) pkg shredded Cheddar cheese

Instructions

  1. Cook macaroni according to package directions; drain and keep warm.
  2. Heat oil and butter in a Dutch oven; add ham. Sauté 5 minutes until ham is browned; sprinkle flour over mixture.
  3. Cook 2 minutes until foamy; add milk, mustard, salt, and pepper. Bring to a boil; cook 5 minutes until thickened.
  4. Stir in cheese and macaroni; cook 5 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen green peas
  • 1 Tbsp butter
  • 3 Tbsp chopped fresh basil

Side Dish Instructions

  1. Cook peas according to package directions; stir in butter and basil. Season with salt to taste.
