Olive and Feta Tilapia
Red Potato-Green Bean Toss
Ingredients
- 2 (4-oz) tilapia fillets, rinsed and patted dry
- ½ tsp dried oregano
- ½ cup chopped green bell pepper
- ¼ cup chopped red onion
- 2 tsp olive oil
- ½ cup chopped tomatoes
- 8 pimiento-stuffed Spanish olives, chopped
- 2 Tbsp crumbled reduced-fat feta cheese
Instructions
- Preheat oven to 400°F.
- Place fish in a small pan coated with cooking spray.
- Top with ¼ tsp oregano, bell pepper and onion; drizzle with oil.
- Bake, covered, 12 minutes.
- Uncover, and top with tomatoes, olives, cheese and ¼ tsp oregano.
- Bake, uncovered, 3 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 10 oz red potatoes, cut into 1-inch pieces
- ½ lb green beans, ends trimmed
- 1½ Tbsp extra virgin olive oil
- 1 Tbsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- 1 small clove garlic, minced
Side Dish Instructions
- Arrange potatoes and green beans in a steamer basket over boiling water. Cover and steam 12 minutes or until potatoes are tender.
- Toss vegetables with remaining ingredients.
