Olive and Feta Tilapia

Red Potato-Green Bean Toss

Ingredients

  • 2 (4-oz) tilapia fillets, rinsed and patted dry
  • ½ tsp dried oregano
  • ½ cup chopped green bell pepper
  • ¼ cup chopped red onion
  • 2 tsp olive oil
  • ½ cup chopped tomatoes
  • 8 pimiento-stuffed Spanish olives, chopped
  • 2 Tbsp crumbled reduced-fat feta cheese

Instructions

  1. Preheat oven to 400°F.
  2. Place fish in a small pan coated with cooking spray.
  3. Top with ¼ tsp oregano, bell pepper and onion; drizzle with oil.
  4. Bake, covered, 12 minutes.
  5. Uncover, and top with tomatoes, olives, cheese and ¼ tsp oregano.
  6. Bake, uncovered, 3 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 10 oz red potatoes, cut into 1-inch pieces
  • ½ lb green beans, ends trimmed
  • 1½ Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 small clove garlic, minced

Side Dish Instructions

  1. Arrange potatoes and green beans in a steamer basket over boiling water. Cover and steam 12 minutes or until potatoes are tender.
  2. Toss vegetables with remaining ingredients.
