Grilled Tuna Caesar Salad
Roasted Broccoli and Mozzarella Toasts
Ingredients
- 1 (8-oz) tuna steak (or use 1 boneless, skinless chicken breast)
- 1 Tbsp olive oil
- ¼ tsp kosher salt
- ⅛ tsp pepper
- 3 cups chopped romaine lettuce
- ½ cup Caesar dressing
- ¼ cup shaved Parmesan cheese
Instructions
- Preheat grill to medium-high heat. Brush fish with oil; sprinkle with salt and pepper.
- Grill fish, covered with grill lid, 3 minutes per side or to desired doneness. Let stand 6 minutes; slice.
- Toss together lettuce, dressing, and cheese. Season with salt and pepper to taste; toss. Top each serving with fish.
Side Dish Ingredients
- ½ (12-oz) pkg broccoli florets
- 2 Tbsp olive oil, divided
- 4 thick slices French bread
- ¼ cup shredded part-skim mozzarella cheese
Side Dish Instructions
- Preheat oven to 450°F. Toss broccoli with 1 Tbsp oil; arrange in a roasting pan. Bake 12 minutes or until tender, turning once. Season with salt and pepper to taste.
- Increase oven temperature to broil. Brush bread with 1 Tbsp oil; arrange on a rimmed baking sheet. Broil 2 minutes. Sprinkle toasts with cheese; broil until golden.
