Easy Chicken Soft Tacos with Feta
Baked Black Beans
Ingredients
- 4 soft taco-size flour tortillas
- 3 deli-grilled chicken tenders
- 1 green onion, thinly sliced
- 1 Roma tomato, chopped
- ⅛ tsp ground cumin
- 1 avocado, halved
- 2 tsp fresh lemon juice
- 1 clove garlic, minced
- ½ cup crumbled reduced-fat feta cheese
Instructions
- Heat tortillas according to package directions.
- Microwave chicken until thoroughly heated; chop. Toss chicken with onion, tomato, and cumin; divide among tortillas.
- Scoop avocado into a bowl; mash with lemon juice. Stir in garlic and salt and pepper to taste. Spoon guacamole over chicken; top with cheese.

- 1 Tbsp vegetable oil
- ½ cup finely chopped onion
- ½ tsp ground cumin
- 1 clove garlic, minced
- 2 (15-oz) cans black beans, drained and rinsed
- ⅓ cup shredded part-skim mozzarella cheese
Side Dish Instructions
- Preheat oven to 450°F. Combine first 5 ingredients in a baking dish; top with cheese. Bake 20 minutes or until bubbly and browned.
