Easy Chicken Soft Tacos with Feta

Ingredients

  • 4 soft taco-size flour tortillas
  • 3 deli-grilled chicken tenders
  • 1 green onion, thinly sliced
  • 1 Roma tomato, chopped
  • ⅛ tsp ground cumin
  • 1 avocado, halved
  • 2 tsp fresh lemon juice
  • 1 clove garlic, minced
  • ½ cup crumbled reduced-fat feta cheese

Instructions

  1. Heat tortillas according to package directions.
  2. Microwave chicken until thoroughly heated; chop. Toss chicken with onion, tomato, and cumin; divide among tortillas.
  3. Scoop avocado into a bowl; mash with lemon juice. Stir in garlic and salt and pepper to taste. Spoon guacamole over chicken; top with cheese.

  • 1 Tbsp vegetable oil
  • ½ cup finely chopped onion
  • ½ tsp ground cumin
  • 1 clove garlic, minced
  • 2 (15-oz) cans black beans, drained and rinsed
  • ⅓ cup shredded part-skim mozzarella cheese

Side Dish Instructions

  1. Preheat oven to 450°F. Combine first 5 ingredients in a baking dish; top with cheese. Bake 20 minutes or until bubbly and browned.
