Vegetarian Black Bean and Avocado Tacos

Ingredients

  • 3 (15-oz) cans no-salt-added black beans, drained and rinsed
  • 1 cup picante sauce, divided
  • 1½ tsp smoked paprika
  • ¾ tsp ground cumin
  • 12 (6-inch) corn tortillas
  • 6 cups shredded romaine lettuce
  • 3 avocados, cubed
  • ¾ cup reduced-fat sour cream
  • 6 green onions, chopped
  • 1 lime, cut into 6 wedges

Instructions

  1. Combine beans, ¼ cup picante sauce, paprika, and cumin in a microwavable bowl.
  2. Cover and microwave at HIGH 2 to 3 minutes or until hot, stirring once. Mash beans to desired consistency with a potato masher.
  3. Heat tortillas according to package directions.
  4. Fill tortillas with bean mixture, lettuce, ¾ cup picante sauce, avocado, sour cream, and onions.
  5. Serve with lime wedges.
