Slow-Roasted Salmon with Citrus Salsa

Ingredients

  • 6 (6-oz) salmon fillets
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 1½ Tbsp olive oil
  • 2 oranges, peeled and chopped
  • 1 red bell pepper, finely chopped
  • 1 large jalapeño pepper, minced
  • ¼ cup finely chopped red onion
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice

Instructions

  1. Preheat oven to 250°F. Place fish on a parchment paper-lined rimmed baking sheet. Sprinkle with salt and pepper. Drizzle with oil.
  2. Bake 20 to 30 minutes or until fish flakes with a fork.
  3. Meanwhile, combine oranges, bell pepper, jalapeño, onion, cilantro, and lime juice in a bowl; serve over fish.

  • 1 (16-oz) pkg cauliflower crumbles
  • 2 Tbsp olive oil
  • 1 cup unsweetened coconut milk
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped green onions

Side Dish Instructions

  1. Cook cauliflower in hot oil in a large skillet over medium heat 5 minutes or until tender, stirring often.
  2. Stir in coconut milk, salt, and pepper. Cook 4 minutes or until creamy. Stir in cilantro and onions.
