Peanutty Beef Stir-Fry
Sweet and Spicy Mango
Ingredients
- ½ cup creamy peanut butter
- 3 Tbsp water
- 2 Tbsp gluten-free soy sauce
- 1 Tbsp honey
- 1 Tbsp gluten-free Asian chili garlic sauce (such as Huy Fong)
- 2 lb flank steak or top sirloin, trimmed (see Note)
- ¼ cup olive oil
- 1 red bell pepper, cut into thin strips
- 4 green onions, thinly sliced
- ½ cup chopped dry roasted, lightly salted peanuts
Instructions
- Whisk together first 5 ingredients. Mixture will be thick.
- Cut beef diagonally across the grain into thin slices. Sprinkle beef lightly with salt and black pepper.
- Sauté beef, in 2 batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 5 minutes or to desired doneness. Remove from skillet.
- Add bell pepper to skillet; sauté 3 to 4 minutes. Add beef and peanut sauce; cook until thoroughly heated.
- Sprinkle with onions and peanuts.
Side Dish Ingredients
- 1 tsp sugar
- ½ tsp lime zest
- ⅛ tsp kosher salt
- ⅛ tsp cayenne pepper
- 1 (16-oz) pkg mango spears (see Note)
- 1 Tbsp lime juice
- ¼ cup chopped fresh cilantro
Side Dish Instructions
- Combine sugar, lime zest, salt, and pepper.
- Toss mango with lime juice in a bowl; sprinkle sugar mixture over mango. Top with cilantro.
