Crispy Chicken Parmesan

Ingredients

  • ¾ lb trimmed and ready fresh thin sliced boneless, skinless chicken breasts
  • 1 large egg
  • ½ cup panko breadcrumbs
  • ¼ cup shredded Parmesan cheese
  • 2 Tbsp olive oil
  • 1 (24-oz) jar pasta sauce
  • 2 slices mozzarella cheese 

Instructions

  1. Lightly season chicken with salt and pepper.
  2. Beat eggs in a shallow dish; combine breadcrumbs and Parmesan in a separate shallow dish. Dip chicken in egg; dredge in breadcrumb mixture to coat.
  3. Cook chicken in hot oil in a large nonstick skillet over medium-high heat,until browned on both sides. Remove from skillet.
  4. Reduce heat to low; add pasta sauce to skillet. Return chicken to skillet, overlapping to fit. Top chicken with mozzarella. Cook 3 to 4 minutes or until chicken is done; serve over hot pasta.

Side Dish Ingredients

  • ½ (16-oz) pkg thin spaghetti
  • ½ (12-oz) pkg broccoli florets
  • 1 Tbsp butter

Side Dish Instructions

  1. Cook pasta and broccoli according to package directions. Toss with butter; season with salt and pepper to taste.
