Crispy Chicken Parmesan

Ingredients
- ¾ lb trimmed and ready fresh thin sliced boneless, skinless chicken breasts
- 1 large egg
- ½ cup panko breadcrumbs
- ¼ cup shredded Parmesan cheese
- 2 Tbsp olive oil
- 1 (24-oz) jar pasta sauce
- 2 slices mozzarella cheese
Instructions
- Lightly season chicken with salt and pepper.
- Beat eggs in a shallow dish; combine breadcrumbs and Parmesan in a separate shallow dish. Dip chicken in egg; dredge in breadcrumb mixture to coat.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat,until browned on both sides. Remove from skillet.
- Reduce heat to low; add pasta sauce to skillet. Return chicken to skillet, overlapping to fit. Top chicken with mozzarella. Cook 3 to 4 minutes or until chicken is done; serve over hot pasta.

- ½ (16-oz) pkg thin spaghetti
- ½ (12-oz) pkg broccoli florets
- 1 Tbsp butter
Side Dish Instructions
- Cook pasta and broccoli according to package directions. Toss with butter; season with salt and pepper to taste.
