Tomato-Basil Chicken

Angel Hair Pasta and Steamed Green Beans

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 3 Tbsp all-purpose flour
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • ½ cup white wine
  • ½ cup chicken broth
  • 1 tomato, chopped
  • ¼ cup heavy cream
  • 2 Tbsp thinly sliced fresh basil

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Dredge in flour to coat.
  2. Melt butter with oil in a nonstick skillet over medium heat. Add chicken, and cook 4 to 5 minutes per side or until browned.
  3. Add wine, and cook until reduced by half. Add broth and tomato; bring to a boil, reduce heat, and simmer 2 minutes. Stir in cream; cook until sauce is slightly thickened. Stir in basil. Serve over pasta.

  • ½ (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
