Tomato-Basil Chicken
Angel Hair Pasta and Steamed Green BeansIngredients
- ¾ lb boneless, skinless chicken breasts
- 3 Tbsp all-purpose flour
- 1 Tbsp butter
- 1 Tbsp olive oil
- ½ cup white wine
- ½ cup chicken broth
- 1 tomato, chopped
- ¼ cup heavy cream
- 2 Tbsp thinly sliced fresh basil
Instructions
- Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Dredge in flour to coat.
- Melt butter with oil in a nonstick skillet over medium heat. Add chicken, and cook 4 to 5 minutes per side or until browned.
- Add wine, and cook until reduced by half. Add broth and tomato; bring to a boil, reduce heat, and simmer 2 minutes. Stir in cream; cook until sauce is slightly thickened. Stir in basil. Serve over pasta.
