Skillet Chicken Cobbler

Ingredients

  • 2 Tbsp butter
  • ¾ lb boneless, skinless chicken breasts, cut into 1-inch chunks
  • ½ cup chopped onion
  • 2 Tbsp all-purpose flour
  • 1 cup chicken broth
  • ¼ cup milk
  • ½ (15-oz) pkg frozen mixed vegetables
  • 1 (6-oz) can refrigerated flaky layer biscuits

Instructions

  1. Preheat oven to 375°F. Melt butter in an ovenproof skillet over medium heat. Add chicken and onion; cook until chicken is browned. Add flour; cook, stirring, 2 minutes. Add broth, milk, and vegetables; cook until mixture is thickened. Season lightly with salt and pepper.
  2. Meanwhile, split biscuits in half lengthwise. Cut each biscuit in half crosswise. Arrange biscuits over hot chicken mixture.
  3. Bake 20 to 22 minutes or until biscuits are golden brown.
