Skillet Chicken Cobbler
Ingredients
- 2 Tbsp butter
- ¾ lb boneless, skinless chicken breasts, cut into 1-inch chunks
- ½ cup chopped onion
- 2 Tbsp all-purpose flour
- 1 cup chicken broth
- ¼ cup milk
- ½ (15-oz) pkg frozen mixed vegetables
- 1 (6-oz) can refrigerated flaky layer biscuits
Instructions
- Preheat oven to 375°F. Melt butter in an ovenproof skillet over medium heat. Add chicken and onion; cook until chicken is browned. Add flour; cook, stirring, 2 minutes. Add broth, milk, and vegetables; cook until mixture is thickened. Season lightly with salt and pepper.
- Meanwhile, split biscuits in half lengthwise. Cut each biscuit in half crosswise. Arrange biscuits over hot chicken mixture.
- Bake 20 to 22 minutes or until biscuits are golden brown.
