Crunchy Parmesan Chicken and Waffles

- 1 cup crushed round buttery crackers
- ¼ cup shredded Parmesan cheese
- ½ Tbsp dried parsley
- ¼ tsp garlic powder
- ¼ cup butter, melted
- ¾ lb boneless, skinless chicken breasts
- ½ (12.3-oz) box frozen waffles
- ½ (2.75-oz) envelope country gravy mix
Instructions
- Preheat oven to 350°F. Stir together cracker crumbs, cheese, parsley, and garlic powder in a shallow bowl. Pour melted butter into a separate shallow bowl.
- Cut chicken in half crosswise; pound to ½-inch-thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
- Dip chicken in melted butter; dredge in cracker mixture to coat. Place on a lightly greased rimmed baking sheet; pour remaining butter over chicken. Bake 25 minutes or until chicken is done.
- Meanwhile, heat waffles according to package directions; arrange on 2 plates. Top each waffle with desired amount of chicken pieces.
- Prepare gravy according to package directions; spoon over chicken.
