Balsamic-Glazed Baked Salmon

Ingredients

  • 6 salmon fillets
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp olive oil
  • 1 tsp dried thyme
  • ½ tsp lemon pepper seasoning
  • ¼ tsp garlic salt

Instructions

  1. Preheat oven to 400°F. Arrange salmon on a foil-lined baking sheet.
  2. Whisk vinegar and remaining ingredients in a small bowl; brush mixture on salmon. Bake 12 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 3 (8.8-oz) pouches microwavable long-grain and brown rice
  • ⅓ cup crumbled feta cheese
  • 2 Tbsp chopped fresh dill
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp olive oil
  • 1 small shallot, thinly sliced

Side Dish Instructions

  1. Heat rice according to package directions.
  2. Combine feta, dill, lemon juice, oil, and shallot in a large bowl; add rice, and toss. Season to taste with salt and pepper.
