Santa Fe Chicken Soup

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 (32-oz) carton organic chicken broth
  • 1 (14.5-oz) can fire-roasted tomatoes
  • 1½ red bell peppers, chopped
  • 1½ cups chopped onion
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • ½ tsp ground coriander
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • 2 avocados, diced

Instructions

  1. Combine chicken, broth, tomatoes, bell pepper, onion, garlic, chili powder, cumin, and coriander in a 4- to 6-quart slow cooker.
  2. Cover and cook on LOW 7 hours or until chicken is done. Remove chicken from cooker; shred with 2 forks.
  3. Return chicken to cooker along with cilantro and lime juice. Increase heat to HIGH, and cook, uncovered, 10 minutes. Top with avocado before serving.
