Quick Prep Slow Cooker
Santa Fe Chicken Soup
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1 (32-oz) carton organic chicken broth
- 1 (14.5-oz) can fire-roasted tomatoes
- 1½ red bell peppers, chopped
- 1½ cups chopped onion
- 3 cloves garlic, minced
- 2 tsp chili powder
- 2 tsp ground cumin
- ½ tsp ground coriander
- ¼ cup chopped fresh cilantro
- 1 Tbsp fresh lime juice
- 2 avocados, diced
Instructions
- Combine chicken, broth, tomatoes, bell pepper, onion, garlic, chili powder, cumin, and coriander in a 4- to 6-quart slow cooker.
- Cover and cook on LOW 7 hours or until chicken is done. Remove chicken from cooker; shred with 2 forks.
- Return chicken to cooker along with cilantro and lime juice. Increase heat to HIGH, and cook, uncovered, 10 minutes. Top with avocado before serving.
