Teriyaki Chicken and Broccoli
Sesame RiceIngredients
- 2 lb boneless, skinless chicken breasts
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- ½ cup low-sodium soy sauce
- ⅓ cup honey
- ¼ cup rice vinegar
- 1 tsp ground ginger
- 1 (12-oz) pkg broccoli florets
- ¼ cup cold water
- 3 Tbsp arrowroot
- ½ cup sliced green onions
Instructions
- Place chicken, onion, and garlic in a 5- to 7-quart slow cooker.
- Whisk together soy sauce, honey, vinegar, and ginger in a bowl; pour over chicken.
- Cover and cook on LOW 7 to 8 hours or until chicken is tender. Shred chicken with 2 forks, and stir in broccoli.
- Whisk together ¼ cup cold water and arrowroot.
- Add to cooker, stirring well. Increase heat to HIGH, cover, and cook 30 minutes or until sauce is thickened.
- Sprinkle with onions. Serve over rice.

- 1½ cups long-grain white rice
- 1 Tbsp sesame seeds
- 1 Tbsp low-sodium soy sauce
Side Dish Instructions
- Cook rice according to package directions; stir in sesame seeds and soy sauce.
