Teriyaki Chicken and Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • ½ cup low-sodium soy sauce
  • ⅓ cup honey
  • ¼ cup rice vinegar
  • 1 tsp ground ginger
  • 1 (12-oz) pkg broccoli florets
  • ¼ cup cold water
  • 3 Tbsp arrowroot
  • ½ cup sliced green onions

Instructions

  1. Place chicken, onion, and garlic in a 5- to 7-quart slow cooker.
  2. Whisk together soy sauce, honey, vinegar, and ginger in a bowl; pour over chicken.
  3. Cover and cook on LOW 7 to 8 hours or until chicken is tender. Shred chicken with 2 forks, and stir in broccoli.
  4. Whisk together ¼ cup cold water and arrowroot.
  5. Add to cooker, stirring well. Increase heat to HIGH, cover, and cook 30 minutes or until sauce is thickened.
  6. Sprinkle with onions. Serve over rice.

  • 1½ cups long-grain white rice
  • 1 Tbsp sesame seeds
  • 1 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Cook rice according to package directions; stir in sesame seeds and soy sauce.
