Grilled Hawaiian Burgers

Ingredients

  • ¼ lb lean ground beef
  • ¼ lb lean ground pork (or use all lean ground beef)
  • 1 tsp minced ginger
  • ½ tsp minced garlic
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ red onion, cut into ¼-inch-thick slices
  • ¼ peeled pineapple, cut into 2 slices
  • 1 avocado, mashed
  • 2 tsp chopped fresh cilantro
  • ½ Tbsp fresh lime juice
  • 2 oz thinly sliced nitrite-free ham

Instructions

  1. Preheat grill to medium-high heat. Stir together beef, pork, ginger, and garlic; season with ⅛ tsp each salt and pepper. Shape mixture into 2 patties.
  2. Grill patties, covered, 5 to 6 minutes per side or to desired doneness.
  3. Grill onion slices and pineapple 2 to 3 minutes per side or until browned.
  4. Stir together mashed avocado, cilantro, and lime juice; season with ⅛ tsp each salt and pepper.
  5. Spread avocado mixture on burgers. Top each with 1 pineapple ring, sliced ham, and grilled onion.

Side Dish Ingredients

  • 1 cup organic strawberries, hulled
  • 2 cups pineapple chunks
  • ¼ cup vanilla Greek yogurt
  • ½ to 1 cup ice cubes

Side Dish Instructions

  1. Combine strawberries, pineapple, and yogurt in a blender; add ½ cup ice. Process until smooth, adding a little water or more ice, as needed.
  2. Pour into glasses.
