Balsamic London Broil
Steamed Asparagus and Wild Rice
Ingredients
- 1 small sweet onion, thinly sliced
- ¾ lb London broil, trimmed
- 2 Tbsp balsamic vinegar
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp whole-grain mustard
- 2 cloves garlic, minced
- ¾ tsp pepper
- 1 sprig fresh rosemary
Instructions
- Place onion in a 4-quart slow cooker. Top with steak, vinegar, soy sauce, mustard, garlic, pepper, and rosemary.
- Cover and cook on LOW 8 hours or until steak is tender.
Side Dish Ingredients
- ½ cup wild rice
- 2 tsp butter, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ½ lb asparagus, trimmed
- 2 Tbsp water
Side Dish Instructions
- Cook rice according to package directions; stir in 1 tsp butter and ⅛ tsp each salt and pepper.
- Place asparagus in a microwave-safe dish with water; cover dish with plastic wrap, and vent one corner.
- Microwave at HIGH 4 to 5 minutes or until asparagus is tender. Drain and stir in 1 tsp butter and ⅛ tsp each salt and pepper.
