Balsamic London Broil

Steamed Asparagus and Wild Rice

Ingredients

  • 1 small sweet onion, thinly sliced
  • ¾ lb London broil, trimmed
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp whole-grain mustard
  • 2 cloves garlic, minced
  • ¾ tsp pepper
  • 1 sprig fresh rosemary

Instructions

  1. Place onion in a 4-quart slow cooker. Top with steak, vinegar, soy sauce, mustard, garlic, pepper, and rosemary.
  2. Cover and cook on LOW 8 hours or until steak is tender.

  • ½ cup wild rice
  • 2 tsp butter, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ lb asparagus, trimmed
  • 2 Tbsp water

Side Dish Instructions

  1. Cook rice according to package directions; stir in 1 tsp butter and ⅛ tsp each salt and pepper.
  2. Place asparagus in a microwave-safe dish with water; cover dish with plastic wrap, and vent one corner.
  3. Microwave at HIGH 4 to 5 minutes or until asparagus is tender. Drain and stir in 1 tsp butter and ⅛ tsp each salt and pepper.
