Chicken Waldorf Salad
Bibb Lettuce and Wheat CrackersIngredients
- ½ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 Tbsp chopped walnuts
- 1 small organic Granny Smith apple, chopped
- 1 small organic Honeycrisp (or other sweet) apple, chopped
- 1 stalk organic celery, chopped
- ¼ cup organic raisins
- ¼ cup plain Greek yogurt
- ¼ cup olive-oil mayonnaise
- 2 Tbsp chopped fresh parsley
- ½ Tbsp fresh lemon juice
- ½ Tbsp honey
Instructions
- Preheat oven to 375°F. Place chicken in a baking dish coated with cooking spray; sprinkle with salt and pepper.
- Bake 25 to 30 minutes or until chicken is done. Cool; cut chicken into small cubes.
- Toast nuts in a dry skillet over medium heat until fragrant. Combine chicken, apples, celery, raisins, and nuts in a bowl.
- Whisk together yogurt, mayonnaise, parsley, lemon juice, and honey; pour dressing over chicken, and toss. Chill at least 1 hour.
