Orange Chicken Kabobs

Parsley Rice and Snow Peas

Ingredients

  • 1 clove garlic, minced
  • 2 Tbsp olive oil
  • ¼ cup rice vinegar
  • 3 Tbsp soy sauce
  • 2 Tbsp sugar
  • 2 Tbsp orange marmalade
  • 1 Tbsp orange zest
  • 1 Tbsp orange juice
  • 1 Tbsp honey
  • 1 tsp ground ginger
  • ¼ tsp crushed red pepper
  • 2 lb boneless, skinless chicken breasts

Instructions

  1. Cook garlic in hot oil in a small saucepan over medium heat 30 seconds. Add vinegar, soy sauce, sugar, marmalade, orange zest, juice, honey, ginger, and red pepper. Simmer 3 to 5 minutes or until slightly thickened. Set aside half of sauce for later use.
  2. Preheat grill or grill pan to medium-high heat. Cut chicken into 1-inch pieces; thread onto metal skewers.
  3. Grill chicken 5 to 6 minutes per side or until done; brush with remaining sauce, and grill 1 minute longer. Serve kabobs with reserved sauce.

Side Dish Ingredients

  • 2 cups long-grain white rice
  • 2 Tbsp butter
  • 2 Tbsp dried parsley
  • 2 (8-oz) pkg snow peas

Side Dish Instructions

  1. Cook rice according to package directions. Add butter and parsley; season with salt and pepper to taste.
  2. Steam snow peas according to package directions.
