Orange Chicken Kabobs
Parsley Rice and Snow PeasIngredients
- 1 clove garlic, minced
- 2 Tbsp olive oil
- ¼ cup rice vinegar
- 3 Tbsp soy sauce
- 2 Tbsp sugar
- 2 Tbsp orange marmalade
- 1 Tbsp orange zest
- 1 Tbsp orange juice
- 1 Tbsp honey
- 1 tsp ground ginger
- ¼ tsp crushed red pepper
- 2 lb boneless, skinless chicken breasts
Instructions
- Cook garlic in hot oil in a small saucepan over medium heat 30 seconds. Add vinegar, soy sauce, sugar, marmalade, orange zest, juice, honey, ginger, and red pepper. Simmer 3 to 5 minutes or until slightly thickened. Set aside half of sauce for later use.
- Preheat grill or grill pan to medium-high heat. Cut chicken into 1-inch pieces; thread onto metal skewers.
- Grill chicken 5 to 6 minutes per side or until done; brush with remaining sauce, and grill 1 minute longer. Serve kabobs with reserved sauce.
Side Dish Ingredients
- 2 cups long-grain white rice
- 2 Tbsp butter
- 2 Tbsp dried parsley
- 2 (8-oz) pkg snow peas
Side Dish Instructions
- Cook rice according to package directions. Add butter and parsley; season with salt and pepper to taste.
- Steam snow peas according to package directions.
