Chicken-Orzo Skillet

Ingredients

  • 2 cups orzo
  • 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 Tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 1½ tsp Italian seasoning
  • ½ tsp salt
  • 2 (14.5-oz) cans diced tomatoes
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 (16-oz) pkg frozen broccoli florets, thawed

Instructions

  1. Cook orzo according to package directions.
  2. Meanwhile, cook chicken in 1 Tbsp hot oil in a large skillet 3 to 5 minutes or until browned. Remove from skillet, and set aside.
  3. Cook garlic in 1 Tbsp hot oil in same skillet over medium heat 30 seconds. Stir in Italian seasoning, salt, tomatoes, and beans. Bring to a boil, reduce heat, and stir in broccoli and chicken.
  4. Simmer 10 minutes or until broccoli is tender; stir in orzo.
