Chia Pudding with Cinnamon, Apples, and Maple Syrup

Ingredients
- ⅓ cup chia seeds
- 1 (13.5-oz) can unsweetened coconut milk
- ¼ cup water
- 4 Tbsp pure maple syrup, divided
- ½ tsp ground cinnamon
- ⅛ tsp salt
- ½ cup raw pecans, coarsely chopped
- 2 apples, cored and chopped
Instructions
- Combine chia seeds, coconut milk, water, 2 Tbsp maple syrup, cinnamon, and salt. Chill overnight.
- Toast nuts in a dry skillet over medium-high heat 2 to 3 minutes or until fragrant. Top each serving of pudding with nuts, apple, and 2 Tbsp maple syrup before serving.
