Chia Pudding with Cinnamon, Apples, and Maple Syrup

Ingredients

  • ⅓ cup chia seeds
  • 1 (13.5-oz) can unsweetened coconut milk
  • ¼ cup water
  • 4 Tbsp pure maple syrup, divided
  • ½ tsp ground cinnamon
  • ⅛ tsp salt
  • ½ cup raw pecans, coarsely chopped
  • 2 apples, cored and chopped

Instructions

  1. Combine chia seeds, coconut milk, water, 2 Tbsp maple syrup, cinnamon, and salt. Chill overnight.
  2. Toast nuts in a dry skillet over medium-high heat 2 to 3 minutes or until fragrant. Top each serving of pudding with nuts, apple, and 2 Tbsp maple syrup before serving.
