Grilled Kale-Beef Burgers

Ingredients

  • 1½ lb grass-fed ground beef
  • 1 cup finely chopped kale
  • ½ onion, minced
  • 1 Tbsp Montreal steak seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp coconut oil, melted

Instructions

  1. Preheat grill to medium-high heat. Mix together beef, kale, onion, steak seasoning, salt, and pepper in a large bowl just until blended using your hands. Shape into 6 patties.
  2. Grill patties on a grill rack rubbed with oil, covered, 6 minutes per side or until centers are no longer pink.

Side Dish Ingredients

  • 1 lb Broccolini, trimmed
  • 2 cloves garlic, minced
  • ⅛ tsp crushed red pepper
  • 1 Tbsp avocado oil
  • ¼ cup organic beef broth
  • ¼ tsp lemon zest
  • 2 tsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp black pepper

Side Dish Instructions

  1. Sauté Broccolini, garlic, and red pepper in hot oil in a large skillet over medium-high heat 4 minutes.
  2. Add broth. Cover, reduce heat to medium-low, and cook 6 minutes or until tender. Stir in lemon zest, lemon juice, salt, and black pepper.
