Spinach-Thyme Turkey Meat Loaf

Ingredients

  • ¾ lb ground turkey
  • ¼ cup diced onion
  • ¾ cup finely chopped baby spinach
  • 3 Tbsp tomato paste
  • 2 Tbsp almond flour
  • 1 large egg, lightly beaten
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F. Mix together turkey, onion, spinach, tomato paste, flour, egg, thyme, salt, and pepper in a bowl until just blended using your hands.
  2. Place in a lightly greased 9- x 5-inch loaf pan, or shape into a loaf on a lightly greased rack in a broiler pan.
  3. Bake 50 minutes to 1 hour or until a meat thermometer reads 165°F and center is no longer pink.

Side Dish Ingredients

  • 1 Tbsp coconut oil
  • ½ onion, diced
  • ¼ cup organic beef broth
  • 1 lb Brussels sprouts, trimmed and thinly sliced
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Melt oil in a large skillet over medium-high heat; add onion, and sauté 5 minutes or until onion is soft. Add broth; bring to a simmer.
  2. Add Brussels sprouts; cook 6 to 8 minutes or until sprouts are tender and wilted; stir in salt and pepper.
