Spinach-Thyme Turkey Meat Loaf
Savory Brussels Sprouts
Ingredients
- ¾ lb ground turkey
- ¼ cup diced onion
- ¾ cup finely chopped baby spinach
- 3 Tbsp tomato paste
- 2 Tbsp almond flour
- 1 large egg, lightly beaten
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F. Mix together turkey, onion, spinach, tomato paste, flour, egg, thyme, salt, and pepper in a bowl until just blended using your hands.
- Place in a lightly greased 9- x 5-inch loaf pan, or shape into a loaf on a lightly greased rack in a broiler pan.
- Bake 50 minutes to 1 hour or until a meat thermometer reads 165°F and center is no longer pink.
Side Dish Ingredients
- 1 Tbsp coconut oil
- ½ onion, diced
- ¼ cup organic beef broth
- 1 lb Brussels sprouts, trimmed and thinly sliced
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Melt oil in a large skillet over medium-high heat; add onion, and sauté 5 minutes or until onion is soft. Add broth; bring to a simmer.
- Add Brussels sprouts; cook 6 to 8 minutes or until sprouts are tender and wilted; stir in salt and pepper.
