Bacon-Tomato Avocado Toast
Ingredients
- 8 slices center-cut bacon
- 2 ripe avocados, mashed
- 8 (1-oz) slices whole-grain bread, toasted
- 1 cup chopped grape tomatoes
- 1 Tbsp chopped green onion
- ¼ tsp kosher salt
Instructions
- Cook bacon, in batches, in a large nonstick skillet 5 minutes or until crisp; drain on paper towels. Crumble bacon.
- Spread avocado over each slice of toast; top evenly with bacon, tomatoes, green onion and salt.
