Bacon-Tomato Avocado Toast

Ingredients

  • 8 slices center-cut bacon
  • 2 ripe avocados, mashed
  • 8 (1-oz) slices whole-grain bread, toasted
  • 1 cup chopped grape tomatoes
  • 1 Tbsp chopped green onion
  • ¼ tsp kosher salt

Instructions

  1. Cook bacon, in batches, in a large nonstick skillet 5 minutes or until crisp; drain on paper towels. Crumble bacon.
  2. Spread avocado over each slice of toast; top evenly with bacon, tomatoes, green onion and salt.
