Italian Lemon Chicken

Sautéed Artichokes and Steamed Broccoli

Ingredients

  • 2 carrots, cut into 3-inch pieces
  • ½ onion, quartered
  • 1½ lb boneless, skinless chicken thighs
  • 1 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Place carrots, onion, and chicken in a 4-quart slow cooker; add ½ cup water.
  2. Stir together oil, seasoning, lemon zest, lemon juice, salt and pepper; spread over chicken.
  3. Cover and cook on LOW 8 hours or until chicken is done. Reserve half of chicken for Kale Caesar Salad with Chicken recipe.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • ½ (16-oz) pkg frozen artichoke hearts, thawed
  • 1 clove garlic, minced
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • ⅛ tsp crushed red pepper
  • 2 cup frozen broccoli florets

Side Dish Instructions

  1. Heat oil in a skillet over medium-high heat. Add artichokes and garlic; cook 6 minutes, stirring occasionally, or until browned. Stir in salt and both peppers.
  2. Steam broccoli according to package directions; season to taste.
