Shrimp Tacos with Mango-Avocado Salsa

Ingredients
- ½ lb peeled and deveined, large raw shrimp
- ¼ tsp garlic powder
- ¼ tsp salt, divided
- 1 lime, divided
- ½ mango, peeled and diced
- ½ avocado, diced
- ½ small red bell pepper, chopped
- 3 Tbsp chopped fresh cilantro, divided
- 4 soft taco-size flour tortillas
Instructions
- Sprinkle shrimp with garlic powder and ⅛ tsp salt. Cook in a large skillet coated with cooking spray over medium-high heat 3 to 4 minutes or until shrimp turn pink.
- Squeeze juice from ½ lime; cut ½ lime into wedges. Combine lime juice, mango, avocado, bell pepper, 2 Tbsp cilantro, and ⅛ tsp salt in a bowl.
- Fill tortillas with shrimp, and top with salsa. Serve with 1 Tbsp cilantro and lime wedges.
