Shrimp Tacos with Mango-Avocado Salsa

Ingredients

  • ½ lb peeled and deveined, large raw shrimp
  • ¼ tsp garlic powder
  • ¼ tsp salt, divided
  • 1 lime, divided
  • ½ mango, peeled and diced
  • ½ avocado, diced
  • ½ small red bell pepper, chopped
  • 3 Tbsp chopped fresh cilantro, divided
  • 4 soft taco-size flour tortillas

Instructions

  1. Sprinkle shrimp with garlic powder and ⅛ tsp salt. Cook in a large skillet coated with cooking spray over medium-high heat 3 to 4 minutes or until shrimp turn pink.
  2. Squeeze juice from ½ lime; cut ½ lime into wedges. Combine lime juice, mango, avocado, bell pepper, 2 Tbsp cilantro, and ⅛ tsp salt in a bowl.
  3. Fill tortillas with shrimp, and top with salsa. Serve with 1 Tbsp cilantro and lime wedges.
