Grilled Honey-Glazed Pork Tenderloin
Charred Broccoli Salad
Ingredients
- 2 Tbsp olive oil
- 1½ Tbsp honey
- 1 Tbsp chopped fresh rosemary
- ¼ tsp salt
- ¼ tsp pepper
- 1 clove garlic, crushed
- ¾ lb pork tenderloin
- 2 Tbsp butter, softened
- 1 tsp Dijon mustard
- ⅛ tsp garlic powder
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together oil, honey, rosemary, salt, pepper, and garlic; brush over pork.
- Grill pork, covered, 20 to 30 minutes or until a meat thermometer reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
- Stir together butter, mustard, and garlic powder. Serve with pork.
Side Dish Ingredients
- ½ lb Broccolini (or use broccoli florets)
- 1½ Tbsp olive oil
- 1½ Tbsp lemon juice
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (5-oz) pkg arugula
- 6 Tbsp refrigerated balsamic vinaigrette
- ¼ cup freshly grated Parmesan cheese
- 2 Tbsp toasted pine nuts
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Drizzle Broccolini with oil and lemon juice; sprinkle with salt and pepper. Grill 3 minutes per side or until charred.
- Toss together arugula, Broccolini, vinaigrette, and cheese in a bowl. Sprinkle with pine nuts.
