Baked Feta Greek Salad

Ingredients

  • ¾ (8-oz) block feta cheese
  • 2 Tbsp olive oil 
  • 1½ Tbsp honey 
  • ¼ tsp crushed red pepper
  • ½ (5-oz) pkg baby spinach
  • ½ English cucumber, chopped
  • ½ cup grape tomatoes, quartered
  • ¼ cup chopped pitted kalamata olives
  • 6 Tbsp refrigerated lemon vinaigrette
  • ¼ cup chopped walnuts
  • ½ tsp dried oregano

Instructions

  1. Preheat oven to 400°F. Pat cheese dry with paper towels, and drizzle with oil in an ovenproof skillet. Bake 3 to 5 minutes or until cheese is soft and springy to touch but not melted. Remove skillet from oven.
  2. Preheat broiler. Brush cheese with honey; sprinkle with pepper. Broil 2 to 4 minutes or until browned. Let cool slightly, then cut into cubes.
  3. Toss together spinach, cucumber, tomatoes, olives, vinaigrette, walnuts, and oregano; divide salad among 3 plates. Top with cheese.
