Baked Feta Greek Salad

Ingredients
- ¾ (8-oz) block feta cheese
- 2 Tbsp olive oil
- 1½ Tbsp honey
- ¼ tsp crushed red pepper
- ½ (5-oz) pkg baby spinach
- ½ English cucumber, chopped
- ½ cup grape tomatoes, quartered
- ¼ cup chopped pitted kalamata olives
- 6 Tbsp refrigerated lemon vinaigrette
- ¼ cup chopped walnuts
- ½ tsp dried oregano
Instructions
- Preheat oven to 400°F. Pat cheese dry with paper towels, and drizzle with oil in an ovenproof skillet. Bake 3 to 5 minutes or until cheese is soft and springy to touch but not melted. Remove skillet from oven.
- Preheat broiler. Brush cheese with honey; sprinkle with pepper. Broil 2 to 4 minutes or until browned. Let cool slightly, then cut into cubes.
- Toss together spinach, cucumber, tomatoes, olives, vinaigrette, walnuts, and oregano; divide salad among 3 plates. Top with cheese.
