Shakshuka Arrabbiata (Poached Eggs in Tomato Sauce)

Ingredients

  • ½ lb ground pork (or use ground turkey)
  • ½ cup chopped red bell pepper
  • 1 clove garlic, crushed
  • 1½ cups no-sugar-added Arrabbiata sauce (such as Rao’s Homemade; see Note) 
  • 3 Tbsp water
  • 3 large eggs
  • ½ cup arugula
  • 1 avocado, sliced
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Cook pork in large skillet over medium-high heat 4 to 6 minutes or until crumbly; add bell pepper and garlic. Cook 5 minutes or until pork is done.
  2. Stir in sauce and water; reduce heat and simmer 3 minutes.
  3. Make 3 wells in mixture, and carefully crack an egg into each well. Cover and cook 5 to 8 minutes or until egg whites are set. Serve topped with arugula, avocado, and cheese.
