Shakshuka Arrabbiata (Poached Eggs in Tomato Sauce)

Ingredients
- ½ lb ground pork (or use ground turkey)
- ½ cup chopped red bell pepper
- 1 clove garlic, crushed
- 1½ cups no-sugar-added Arrabbiata sauce (such as Rao’s Homemade; see Note)
- 3 Tbsp water
- 3 large eggs
- ½ cup arugula
- 1 avocado, sliced
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Cook pork in large skillet over medium-high heat 4 to 6 minutes or until crumbly; add bell pepper and garlic. Cook 5 minutes or until pork is done.
- Stir in sauce and water; reduce heat and simmer 3 minutes.
- Make 3 wells in mixture, and carefully crack an egg into each well. Cover and cook 5 to 8 minutes or until egg whites are set. Serve topped with arugula, avocado, and cheese.
