Sloppy Joe Lettuce Wraps

Ingredients

  • ½ lb ground beef
  • 1 cup sliced mushrooms
  • ¾ cup chopped onion
  • 2 cloves garlic, minced
  • ½ Tbsp vegetable oil
  • ½ (6-oz) can tomato paste
  • ⅓ cup low-sodium beef broth
  • ½ Tbsp apple cider vinegar
  • ¾ tsp chili powder
  • ½ tsp ground cumin
  • 6 large butter lettuce leaves (about 1 head)

Instructions

  1. Cook beef in a large nonstick skillet over medium heat 8 minutes or until meat crumbles and is no longer pink; drain and set aside.
  2. Cook mushrooms, onion, and garlic in hot oil in skillet 5 minutes or until onion is tender. Stir in tomato paste, broth, vinegar, chili powder, and cumin.
  3. Return beef to skillet, and cook 10 minutes or until sauce is thickened. Spoon beef mixture onto lettuce; roll up.

  • ½ (16-oz) pkg frozen broccoli and cheese veggie tots (such as Green Giant)

  1. Prepare tots according to package directions.
