Sloppy Joe Lettuce Wraps
Broccoli and Cheese TotsIngredients
- ½ lb ground beef
- 1 cup sliced mushrooms
- ¾ cup chopped onion
- 2 cloves garlic, minced
- ½ Tbsp vegetable oil
- ½ (6-oz) can tomato paste
- ⅓ cup low-sodium beef broth
- ½ Tbsp apple cider vinegar
- ¾ tsp chili powder
- ½ tsp ground cumin
- 6 large butter lettuce leaves (about 1 head)
Instructions
- Cook beef in a large nonstick skillet over medium heat 8 minutes or until meat crumbles and is no longer pink; drain and set aside.
- Cook mushrooms, onion, and garlic in hot oil in skillet 5 minutes or until onion is tender. Stir in tomato paste, broth, vinegar, chili powder, and cumin.
- Return beef to skillet, and cook 10 minutes or until sauce is thickened. Spoon beef mixture onto lettuce; roll up.

- ½ (16-oz) pkg frozen broccoli and cheese veggie tots (such as Green Giant)
