Garlic-Parsley Roasted Chicken

Ingredients

  • 2 Tbsp butter, softened
  • 2 Tbsp finely chopped fresh parsley
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 clove garlic, minced
  • 2 (6-oz) boneless, skinless chicken breasts

Instructions

  1. Preheat oven to 425°F. Combine butter, parsley, salt, pepper, and garlic; rub on chicken on a small greased baking sheet.
  2. Roast 15 to 18 minutes or until done.

  • ½ cup whole wheat Israeli (pearl) couscous
  • 1 cup frozen butternut squash
  • 1½ Tbsp chopped fresh parsley
  • 2 tsp olive oil
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook couscous and squash according to package directions.
  2. Toss together couscous, squash, parsley, oil, and salt.
