Garlic-Parsley Roasted Chicken
Couscous with Butternut Squash
Ingredients
- 2 Tbsp butter, softened
- 2 Tbsp finely chopped fresh parsley
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 clove garlic, minced
- 2 (6-oz) boneless, skinless chicken breasts
Instructions
- Preheat oven to 425°F. Combine butter, parsley, salt, pepper, and garlic; rub on chicken on a small greased baking sheet.
- Roast 15 to 18 minutes or until done.

- ½ cup whole wheat Israeli (pearl) couscous
- 1 cup frozen butternut squash
- 1½ Tbsp chopped fresh parsley
- 2 tsp olive oil
- ⅛ tsp salt
Side Dish Instructions
- Cook couscous and squash according to package directions.
- Toss together couscous, squash, parsley, oil, and salt.
