Roast Beef Sandwiches with Horseradish Sauce

Ingredients

  • 2½ Tbsp sour cream
  • 2 tsp prepared horseradish
  • 2 tsp milk
  • ⅛ tsp dried thyme
  • 1 (7-oz) pkg gluten-free sliced roast beef (such as Hillshire Farm Naturals)
  • 2 frozen gluten-free hamburger buns, thawed
  • ¾ cup baby arugula

Instructions

  1. Stir together sour cream, horseradish, milk, and thyme in a small bowl. Serve roast beef on buns with horseradish sauce and arugula.

Side Dish Ingredients

  • 2 Roma tomatoes, cut into large chunks
  • ½ zucchini, halved and thinly sliced
  • ¼ cup sliced red onion
  • 1½ Tbsp chopped fresh basil
  • 1½ Tbsp olive oil
  • ½ Tbsp apple cider vinegar
  • ½ tsp Dijon mustard

Side Dish Instructions

  1. Combine tomatoes, zucchini, onion, and basil in a bowl.
  2. Whisk together oil, vinegar, mustard, and desired amount of salt and pepper. Pour over tomato mixture; toss.
