Roast Beef Sandwiches with Horseradish Sauce
Summer Tomato SaladIngredients
- 2½ Tbsp sour cream
- 2 tsp prepared horseradish
- 2 tsp milk
- ⅛ tsp dried thyme
- 1 (7-oz) pkg gluten-free sliced roast beef (such as Hillshire Farm Naturals)
- 2 frozen gluten-free hamburger buns, thawed
- ¾ cup baby arugula
Instructions
- Stir together sour cream, horseradish, milk, and thyme in a small bowl. Serve roast beef on buns with horseradish sauce and arugula.
Side Dish Ingredients
- 2 Roma tomatoes, cut into large chunks
- ½ zucchini, halved and thinly sliced
- ¼ cup sliced red onion
- 1½ Tbsp chopped fresh basil
- 1½ Tbsp olive oil
- ½ Tbsp apple cider vinegar
- ½ tsp Dijon mustard
Side Dish Instructions
- Combine tomatoes, zucchini, onion, and basil in a bowl.
- Whisk together oil, vinegar, mustard, and desired amount of salt and pepper. Pour over tomato mixture; toss.
