Honey-Lime Pork Chops

Ingredients

  • ¼ cup honey
  • 1 tsp lime zest
  • 1 Tbsp fresh lime juice
  • ¼ tsp ground chipotle chile pepper
  • 6 (1-inch-thick) boneless pork chops
  • 1 Tbsp olive oil
  • 2 limes, halved

Instructions

  1. Preheat grill or grill pan to medium-high heat. Whisk together honey, lime zest, lime juice, and chipotle pepper in a bowl.
  2. Brush pork with oil; season lightly with salt and pepper. Grill pork, covered, 5 minutes per side or until a meat thermometer inserted in thickest portion reads 145°F.
  3. Brush pork with honey mixture during last 2 minutes of grilling. Grill limes, cut sides down, 2 minutes or until charred. Drizzle remaining honey mixture over pork before serving.

Side Dish Ingredients

  • 2 large sweet potatoes
  • 2 Tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Preheat oven to 400°F. Cut potatoes into wedges. Toss with oil, paprika, garlic powder, and desired amount of salt and pepper on a lightly greased baking sheet.
  2. Bake 30 to 40 minutes or until browned and crisp.
  3. Steam green beans according to package directions; season with salt and pepper to taste.
