Honey-Lime Pork Chops
Roasted Sweet Potato Wedges and Steamed Green Beans
Ingredients
- ¼ cup honey
- 1 tsp lime zest
- 1 Tbsp fresh lime juice
- ¼ tsp ground chipotle chile pepper
- 6 (1-inch-thick) boneless pork chops
- 1 Tbsp olive oil
- 2 limes, halved
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together honey, lime zest, lime juice, and chipotle pepper in a bowl.
- Brush pork with oil; season lightly with salt and pepper. Grill pork, covered, 5 minutes per side or until a meat thermometer inserted in thickest portion reads 145°F.
- Brush pork with honey mixture during last 2 minutes of grilling. Grill limes, cut sides down, 2 minutes or until charred. Drizzle remaining honey mixture over pork before serving.

- 2 large sweet potatoes
- 2 Tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 (16-oz) pkg frozen green beans
Side Dish Instructions
- Preheat oven to 400°F. Cut potatoes into wedges. Toss with oil, paprika, garlic powder, and desired amount of salt and pepper on a lightly greased baking sheet.
- Bake 30 to 40 minutes or until browned and crisp.
- Steam green beans according to package directions; season with salt and pepper to taste.
