Grilled Chicken Sausage Sandwiches
Pineapple and Kiwi Salad
Ingredients
- 1 Roma tomato, finely chopped
- 2 tsp finely chopped red onion
- ½ tsp sugar
- ½ tsp apple cider vinegar
- ⅛ tsp crushed red pepper
- 2 (3-oz) fully cooked chicken-apple sausages (see Note)
- 2 (1.5-oz) whole wheat hamburger buns
Instructions
- Combine tomato, onion, sugar, vinegar, and red pepper in a small bowl; set aside.
- Preheat grill or grill pan to medium-high heat. Grill sausages according to package directions; cut in half lengthwise. Cut each piece in half crosswise.
- Grill buns, covered, 1 to 2 minutes or until lightly toasted.
- Serve sausages on buns with tomato mixture.
Side Dish Ingredients
- 1 cup chopped pineapple
- 2 kiwifruit, peeled and sliced
- 1 tsp fresh lemon juice
- ½ tsp honey
Side Dish Instructions
- Combine pineapple and kiwifruit in a shallow bowl. Drizzle with lemon juice and honey; toss. Chill 2 hours.
