Grilled Chicken Sausage Sandwiches

Ingredients

  • 1 Roma tomato, finely chopped
  • 2 tsp finely chopped red onion
  • ½ tsp sugar
  • ½ tsp apple cider vinegar
  • ⅛ tsp crushed red pepper
  • 2 (3-oz) fully cooked chicken-apple sausages (see Note)
  • 2 (1.5-oz) whole wheat hamburger buns

Instructions

  1. Combine tomato, onion, sugar, vinegar, and red pepper in a small bowl; set aside.
  2. Preheat grill or grill pan to medium-high heat. Grill sausages according to package directions; cut in half lengthwise. Cut each piece in half crosswise.
  3. Grill buns, covered, 1 to 2 minutes or until lightly toasted.
  4. Serve sausages on buns with tomato mixture.

Side Dish Ingredients

  • 1 cup chopped pineapple
  • 2 kiwifruit, peeled and sliced
  • 1 tsp fresh lemon juice
  • ½ tsp honey

Side Dish Instructions

  1. Combine pineapple and kiwifruit in a shallow bowl. Drizzle with lemon juice and honey; toss. Chill 2 hours.
