Citrus Chicken Thighs
Steamed Wehani Rice and StrawberriesIngredients
- 2 oranges
- 3 limes
- 4 cloves garlic, minced
- ¼ cup chopped fresh cilantro
- ¼ cup low-sodium chicken broth
- ¼ cup olive oil
- 2 Tbsp honey
- 2 lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 avocados, sliced
Instructions
- Grate zest from 1 orange and 1 lime; juice all oranges and limes.
- Combine zest, citrus juice, garlic, cilantro, broth, oil, and honey in a large zip-top plastic freezer bag.
- Add chicken; seal and chill 1 to 6 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade; discard marinade. Sprinkle chicken with salt and pepper.
- Grill, covered, 8 to 10 minutes or until done, turning once.
- Top chicken with avocado.

- 1 cup wehani rice (or use other brown rice)
- ½ tsp salt
- ½ tsp pepper
- 1 (16-oz) pkg strawberries, halved
Side Dish Instructions
- Cook rice according to package directions; stir in salt and pepper.
- Serve strawberries with chicken and rice.
