Citrus Chicken Thighs

Ingredients

  • 2 oranges
  • 3 limes
  • 4 cloves garlic, minced
  • ¼ cup chopped fresh cilantro
  • ¼ cup low-sodium chicken broth
  • ¼ cup olive oil
  • 2 Tbsp honey
  • 2 lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 2 avocados, sliced

Instructions

  1. Grate zest from 1 orange and 1 lime; juice all oranges and limes.
  2. Combine zest, citrus juice, garlic, cilantro, broth, oil, and honey in a large zip-top plastic freezer bag.
  3. Add chicken; seal and chill 1 to 6 hours.
  4. Preheat grill to medium-high heat. Remove chicken from marinade; discard marinade. Sprinkle chicken with salt and pepper.
  5. Grill, covered, 8 to 10 minutes or until done, turning once.
  6. Top chicken with avocado.

Side Dish Ingredients

  • 1 cup wehani rice (or use other brown rice)
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (16-oz) pkg strawberries, halved

Side Dish Instructions

  1. Cook rice according to package directions; stir in salt and pepper.
  2. Serve strawberries with chicken and rice.
