Peanut-Crusted Chicken Fingers

Ingredients

  • ½ cup milk
  • ¼ cup creamy peanut butter
  • 1 large egg
  • ¾ lb chicken tenderloins
  • ½ cup all-purpose flour
  • ½ cup finely chopped salted peanuts
  • ½ cup vegetable oil

Instructions

  1. Whisk together milk, peanut butter, and egg in a large bowl. Add chicken, and let stand 30 minutes.
  2. Meanwhile, preheat oven to 400°F. Whisk together flour and nuts in a shallow bowl. Dip chicken in flour mixture, pressing gently to adhere.
  3. Cook chicken in hot oil, in batches, in a skillet over medium heat 2 to 3 minutes per side or until browned. Transfer chicken to a lightly greased wire rack set on a rimmed baking sheet.
  4. Bake 10 minutes or until chicken is done.

  • ¼ cup mayonnaise
  • 2 tsp apple cider vinegar
  • 1 tsp honey
  • ½ (16-oz) pkg tricolor coleslaw
  • 1 Gala apple, sliced

Side Dish Instructions

  1. Whisk together mayonnaise, vinegar, and honey in a large bowl. Add coleslaw and apple; toss.
