Peanut-Crusted Chicken Fingers
Crunchy Apple Coleslaw
Ingredients
- ½ cup milk
- ¼ cup creamy peanut butter
- 1 large egg
- ¾ lb chicken tenderloins
- ½ cup all-purpose flour
- ½ cup finely chopped salted peanuts
- ½ cup vegetable oil
Instructions
- Whisk together milk, peanut butter, and egg in a large bowl. Add chicken, and let stand 30 minutes.
- Meanwhile, preheat oven to 400°F. Whisk together flour and nuts in a shallow bowl. Dip chicken in flour mixture, pressing gently to adhere.
- Cook chicken in hot oil, in batches, in a skillet over medium heat 2 to 3 minutes per side or until browned. Transfer chicken to a lightly greased wire rack set on a rimmed baking sheet.
- Bake 10 minutes or until chicken is done.

- ¼ cup mayonnaise
- 2 tsp apple cider vinegar
- 1 tsp honey
- ½ (16-oz) pkg tricolor coleslaw
- 1 Gala apple, sliced

- Whisk together mayonnaise, vinegar, and honey in a large bowl. Add coleslaw and apple; toss.
