Balsamic Pork Chops with Apples

Ingredients

  • 2 (1½-inch-thick) boneless pork loin chops
  • 2 Tbsp all-purpose flour
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 1 apple, cored and thinly sliced (such as Gala)
  • ½ onion, thinly sliced
  • ¼ cup chicken broth
  • ¼ cup balsamic vinegar
  • ¼ tsp crushed dried rosemary

Instructions

  1. Lightly season pork chops with salt and pepper; dredge in flour, shaking off excess.
  2. Cook pork in hot oil in a large skillet over medium-high heat 2 minutes per side or until browned. Remove from skillet, and set aside.
  3. Melt butter in skillet over medium heat; add apple and onion. Cook, stirring, 2 minutes.
  4. Stir in broth, vinegar, and rosemary; bring to a boil, reduce heat, and simmer 5 minutes.
  5. Return pork chops to pan, and cook 3 minutes or until chops are done and sauce is thickened.

Side Dish Ingredients

  • ½ (12-oz) pkg broccoli florets
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Toss together broccoli and oil on a rimmed baking sheet. Bake 10 minutes or until crisp-tender; season with salt and pepper to taste.
