Cheesy Stroganoff Tortellini

Ingredients

  • 1 (9-oz) pkg refrigerated cheese tortellini
  • ½ lb ground beef
  • ¼ cup chopped onion
  • ½ (8-oz) pkg sliced mushrooms
  • 1 tsp minced garlic 
  • 1½ Tbsp all-purpose flour
  • 1 cup beef broth
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook tortellini according to package directions; drain and keep warm.
  2. Meanwhile, cook beef, onion, mushrooms, and garlic in a large skillet over medium-high heat until beef is browned and crumbly; drain and return to skillet.
  3. Add flour; cook, stirring constantly, 2 minutes. Gradually stir in broth, and cook until mixture is thickened. Stir in sour cream and tortellini; sprinkle with cheese.
  4. Cover and cook 2 minutes or until cheese is melted.

Side Dish Ingredients

  • ½ (16-oz) pkg frozen peas
  • 1 Tbsp butter

Side Dish Instructions

  1. Steam peas according to package directions; toss with butter until melted. Season with salt and pepper to taste.
