Creamy Pasta with Roasted Red Peppers

Ingredients

  • ½ (16-oz) pkg penne pasta
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ (10-oz) pkg baby spinach
  • ½ (8-oz) block cream cheese
  • ½ (12-oz) jar roasted red bell peppers, drained and sliced
  • ½ tsp salt
  • ¼ cup chopped fresh basil
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions. Drain, reserving ¼ cup pasta water.
  2. Heat oil in a large skillet; add garlic and spinach, cooking 5 minutes or until spinach is wilted.
  3. Add reserved pasta water and cream cheese; cook until cream cheese melts, stirring constantly. Add pasta, bell peppers, and salt; toss. Sprinkle with basil and Parmesan.
