Falafel Burgers

Ingredients

  • 6 falafel veggie burgers
  • 1 cup plain Greek yogurt
  • 2 Tbsp chopped fresh dill
  • 2 Tbsp lemon juice
  • 1 Tbsp water
  • ¼ tsp salt
  • 2 cloves garlic, minced
  • 6 whole wheat hamburger buns, toasted
  • ½ cup chopped fresh cilantro

Instructions

  1. Prepare burgers according to package directions.
  2. Meanwhile, combine yogurt, dill, lemon juice, water, salt, and garlic in a bowl. Spread buns with yogurt sauce; top with burgers and cilantro.

Side Dish Ingredients

  • 1 English cucumber, sliced
  • 1 pint grape tomatoes
  • ½ cup thinly sliced red onion
  • ⅓ cup refrigerated red wine vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl. Chill until ready to serve.
