Buttered Lemon Cod

Herbed Orzo and Broccoli

Ingredients

  • 3 lemons, divided
  • 6 (6-oz) cod fillets
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¼ cup butter
  • ¼ cup chopped fresh basil, divided

Instructions

  1. Grate zest and squeeze juice from 2 lemons to yield 4 tsp zest and 4 Tbsp juice. Cut 1 lemon into wedges.
  2. Sprinkle fish with 2 tsp zest, salt, and pepper. Cook fish in hot oil in a large skillet over medium heat 4 minutes per side or until browned.
  3. Meanwhile, melt butter in a saucepan. Stir in 3 Tbsp basil, lemon juice, and 2 tsp zest. Add butter mixture to skillet with fish, turning fish to coat in butter mixture. Sprinkle with 1 Tbsp basil; serve with lemon wedges.

  • ½ tsp pepper, divided
  • 10 oz orzo (1½ cups)
  • ¼ cup chopped fresh basil
  • 3 Tbsp olive oil

  1. Cook broccoli according to package directions. Stir in ¼ tsp each salt and pepper.
  2. Cook orzo according to package directions. Stir in basil, oil, and ¼ tsp each salt and pepper.
