Sheet Pan Salmon and Vegetables

Ingredients

  • ½ lb small red potatoes, halved
  • 2 tsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 2 (6-oz) salmon fillets
  • 1¾ cups broccoli florets
  • ¼ cup mayonnaise
  • 2 tsp chopped fresh flat-leaf parsley
  • 1 tsp Dijon mustard
  • 1 small shallot, minced

Instructions

  1. Preheat oven to 450°F. Toss potatoes with oil and ⅛ tsp each salt and pepper on a rimmed baking sheet. Bake 15 minutes.
  2. Meanwhile, sprinkle fish with ⅛ tsp each salt and pepper. Add fish and broccoli to baking sheet. Bake 10 minutes longer or until potatoes are tender and fish flakes with a fork.
  3. Meanwhile, stir together mayonnaise, parsley, mustard, and shallot. Serve with fish and vegetables.
