Sheet Pan Salmon and Vegetables

Ingredients
- ½ lb small red potatoes, halved
- 2 tsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 2 (6-oz) salmon fillets
- 1¾ cups broccoli florets
- ¼ cup mayonnaise
- 2 tsp chopped fresh flat-leaf parsley
- 1 tsp Dijon mustard
- 1 small shallot, minced
Instructions
- Preheat oven to 450°F. Toss potatoes with oil and ⅛ tsp each salt and pepper on a rimmed baking sheet. Bake 15 minutes.
- Meanwhile, sprinkle fish with ⅛ tsp each salt and pepper. Add fish and broccoli to baking sheet. Bake 10 minutes longer or until potatoes are tender and fish flakes with a fork.
- Meanwhile, stir together mayonnaise, parsley, mustard, and shallot. Serve with fish and vegetables.
