Ranch Chicken Burritos

Ingredients

  • 2 burrito-size flour tortillas
  • 1 cup shredded rotisserie chicken
  • 2 Tbsp Ranch dressing
  • 1 cup chopped romaine lettuce
  • 2 Roma tomatoes, chopped
  • ½ cup shredded mozzarella cheese
  • 1 Tbsp chopped fresh dill

Instructions

  1. Place tortillas between damp paper towels; microwave at HIGH about 30 seconds or until warm and pliable.
  2. Spoon chicken onto warm tortillas. Top with dressing, lettuce, tomatoes, cheese, and dill. Roll up, burrito style.
  3. Cook burritos in a large skillet coated with cooking spray over medium-high heat 2 to 3 minutes per side or until toasted.

Side Dish Ingredients

  • 1 cup honeydew chunks
  • ½ cup English cucumber chunks
  • 2 tsp extra virgin olive oil
  • 2 tsp white wine vinegar
  • 2 tsp chopped fresh mint

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
