Ranch Chicken Burritos
Melon and Cucumber Toss
Ingredients
- 2 burrito-size flour tortillas
- 1 cup shredded rotisserie chicken
- 2 Tbsp Ranch dressing
- 1 cup chopped romaine lettuce
- 2 Roma tomatoes, chopped
- ½ cup shredded mozzarella cheese
- 1 Tbsp chopped fresh dill
Instructions
- Place tortillas between damp paper towels; microwave at HIGH about 30 seconds or until warm and pliable.
- Spoon chicken onto warm tortillas. Top with dressing, lettuce, tomatoes, cheese, and dill. Roll up, burrito style.
- Cook burritos in a large skillet coated with cooking spray over medium-high heat 2 to 3 minutes per side or until toasted.
Side Dish Ingredients
- 1 cup honeydew chunks
- ½ cup English cucumber chunks
- 2 tsp extra virgin olive oil
- 2 tsp white wine vinegar
- 2 tsp chopped fresh mint
Side Dish Instructions
- Toss together all ingredients in a bowl.
