Oven-Baked Meatballs in Marinara Sauce
Garlic Rotini and Spinach SautéIngredients
- ½ lb lean ground turkey
- 2 Tbsp finely chopped green onion
- 1 Tbsp chopped fresh basil
- 1 tsp Italian seasoning
- ⅛ tsp pepper
- 1 egg white
- 1 cup low-sodium marinara sauce (such as Prego Heart Smart)
Instructions
- Preheat oven to 400°F; line a rimmed baking sheet with foil. Place a wire cooling rack over foil.
- Stir together all ingredients, except marinara sauce.
- Shape mixture into 1-inch balls; place on wire rack.
- Bake 15 to 18 minutes or until no longer pink in center.
- Transfer meatballs to a skillet; add marinara sauce, and cook over medium heat 5 minutes or until sauce is thoroughly heated.
Side Dish Ingredients
- 3 oz whole-grain rotini pasta
- 4 tsp extra virgin olive oil, divided
- 1 clove garlic, minced
- 1 (5-oz) pkg baby spinach
- ⅛ tsp salt
Side Dish Instructions
- Cook pasta according to package directions; toss with 2 tsp oil and garlic.
- Heat a large nonstick skillet coated with cooking spray over medium-high heat.
- Add spinach and salt; cook 2 minutes or just until wilted, tossing constantly; drizzle with 2 tsp oil.
- Serve meatballs over pasta alongside spinach.
