Oven-Baked Meatballs in Marinara Sauce

Ingredients

  • ½ lb lean ground turkey
  • 2 Tbsp finely chopped green onion
  • 1 Tbsp chopped fresh basil
  • 1 tsp Italian seasoning
  • ⅛ tsp pepper
  • 1 egg white
  • 1 cup low-sodium marinara sauce (such as Prego Heart Smart)

Instructions

  1. Preheat oven to 400°F; line a rimmed baking sheet with foil. Place a wire cooling rack over foil.
  2. Stir together all ingredients, except marinara sauce.
  3. Shape mixture into 1-inch balls; place on wire rack.
  4. Bake 15 to 18 minutes or until no longer pink in center.
  5. Transfer meatballs to a skillet; add marinara sauce, and cook over medium heat 5 minutes or until sauce is thoroughly heated.

Side Dish Ingredients

  • 3 oz whole-grain rotini pasta
  • 4 tsp extra virgin olive oil, divided
  • 1 clove garlic, minced
  • 1 (5-oz) pkg baby spinach
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook pasta according to package directions; toss with 2 tsp oil and garlic.
  2. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  3. Add spinach and salt; cook 2 minutes or just until wilted, tossing constantly; drizzle with 2 tsp oil.
  4. Serve meatballs over pasta alongside spinach.
