Italian White Bean Soup

Citrus and Greens Salad

Ingredients

  • 1 oz whole-grain rotini pasta
  • 1 (14.5-oz) can no-salt-added stewed tomatoes
  • 1 cup water
  • ¾ cup no-salt-added navy beans, drained and rinsed
  • 1 tsp sugar
  • ¼ tsp dried rosemary, crushed
  • 1 cup arugula
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp salt
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain well.
  2. Meanwhile, combine tomatoes, water, beans, sugar, and rosemary in a medium saucepan; bring to a boil over high heat.
  3. Reduce heat to medium; cover and cook 10 minutes.
  4. Roughly mash larger pieces of tomato with a potato masher or whisk; stir in cooked rotini, and cook 1 minute.
  5. Remove from heat; stir in arugula, basil, oil, and salt.
  6. Divide between 2 servings; sprinkle with cheese.

Side Dish Ingredients

  • 1 navel orange
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • ⅛ tsp salt
  • ½ (5-oz) pkg salad greens
  • 2 Tbsp chopped red onion
  • 2 Tbsp dried cranberries
  • ⅛ tsp pepper

Side Dish Instructions

  1. Peel and section orange.
  2. Whisk together oil, vinegar, and salt in a bowl. Add salad greens, orange sections, onion, and cranberries; toss. Sprinkle with pepper.
