Lemon-Rosemary Chicken Thighs

Ingredients

  • 2 cloves garlic, minced
  • 2 Tbsp lemon juice
  • 1 Tbsp chopped fresh rosemary
  • 2 Tbsp olive oil
  • 4 boneless, skinless chicken thighs
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Combine garlic, lemon juice, rosemary, and oil in a small bowl. Pour over chicken in a large zip-top plastic bag; seal and chill 1 hour.
  2. Sprinkle chicken with salt and pepper. Cook in a grill pan or cast-iron skillet over medium-high heat 5 to 7 minutes per side or until done.

Side Dish Ingredients

  • ½ head iceberg lettuce, halved
  • 1 cup grape tomatoes, quartered
  • ⅓ cup refrigerated yogurt Ranch dressing (such as Bolthouse)

Side Dish Instructions

  1. Place 1 lettuce half on each plate; top with tomatoes and dressing. Season with salt and pepper to taste.
