Lemon-Rosemary Chicken Thighs
Classic Wedge Salads
Ingredients
- 2 cloves garlic, minced
- 2 Tbsp lemon juice
- 1 Tbsp chopped fresh rosemary
- 2 Tbsp olive oil
- 4 boneless, skinless chicken thighs
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Combine garlic, lemon juice, rosemary, and oil in a small bowl. Pour over chicken in a large zip-top plastic bag; seal and chill 1 hour.
- Sprinkle chicken with salt and pepper. Cook in a grill pan or cast-iron skillet over medium-high heat 5 to 7 minutes per side or until done.
Side Dish Ingredients
- ½ head iceberg lettuce, halved
- 1 cup grape tomatoes, quartered
- ⅓ cup refrigerated yogurt Ranch dressing (such as Bolthouse)
Side Dish Instructions
- Place 1 lettuce half on each plate; top with tomatoes and dressing. Season with salt and pepper to taste.
