Crispy Oven-Baked Fish Sticks

Ingredients

  • 1 cup panko breadcrumbs
  • 1 Tbsp chopped fresh parsley
  • ¼ cup roasted garlic mayonnaise (such as Hellmann's)
  • 1 tsp seafood seasoning (such as Old Bay)
  • ¾ lb grouper, cut into 1-inch-thick strips
  • ½ (11.5-oz) bottle cocktail sauce
  • ½ lemon, cut into wedges

Instructions

  1. Preheat oven to 450°F. Stir together panko and parsley in a shallow bowl. Stir together mayonnaise, and seafood seasoning in a large bowl.
  2. Dip fish in mayonnaise mixture; dredge in panko mixture, shaking off excess. Place on a greased wire rack on a baking sheet.
  3. Bake 7 to 8 minutes or until fish flakes with a fork. Serve with cocktail sauce and lemon wedges.

Side Dish Ingredients

  • 1 apple, cored and chopped
  • 1 Tbsp fresh lemon juice
  • 1 (13.2-oz) pkg chopped salad kit with sunflower seeds (such as Dole Sunflower Crunch)

Side Dish Instructions

  1. Toss apple in lemon juice.
  2. Prepare salad kit according to package directions. Add apples; toss.
