Orzo, Chickpea, and Spinach Salad with Feta

Ingredients

  • 8 oz orzo
  • 2 Tbsp pine nuts (see Note)
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1 (5-oz) pkg baby spinach, coarsely chopped
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup crumbled feta cheese

Instructions

  1. Cook orzo according to package directions. Toast nuts in a dry skillet over medium heat 3 to 5 minutes or until golden and fragrant.
  2. Toss together orzo, chickpeas, spinach, nuts, oil, lemon juice, salt, and pepper in a large bowl. Serve salad sprinkled with cheese.

Side Dish Ingredients

  • 1 grapefruit, halved
  • 2 tsp turbinado sugar
  • ⅛ tsp ground cinnamon
  • ⅓ cup plain Greek yogurt
  • 2 tsp honey

Side Dish Instructions

  1. Preheat broiler. Place grapefruit in a shallow baking dish lined with foil, cut sides up. Sprinkle with sugar and cinnamon. Broil 4 to 5 minutes or until sugar begins to brown.
  2. Stir together yogurt and honey; serve over grapefruit.
