Orzo, Chickpea, and Spinach Salad with Feta
Broiled Grapefruit with Honey Yogurt
Ingredients
- 8 oz orzo
- 2 Tbsp pine nuts (see Note)
- 1 (15-oz) can chickpeas, drained and rinsed
- 1 (5-oz) pkg baby spinach, coarsely chopped
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup crumbled feta cheese
Instructions
- Cook orzo according to package directions. Toast nuts in a dry skillet over medium heat 3 to 5 minutes or until golden and fragrant.
- Toss together orzo, chickpeas, spinach, nuts, oil, lemon juice, salt, and pepper in a large bowl. Serve salad sprinkled with cheese.
Side Dish Ingredients
- 1 grapefruit, halved
- 2 tsp turbinado sugar
- ⅛ tsp ground cinnamon
- ⅓ cup plain Greek yogurt
- 2 tsp honey
Side Dish Instructions
- Preheat broiler. Place grapefruit in a shallow baking dish lined with foil, cut sides up. Sprinkle with sugar and cinnamon. Broil 4 to 5 minutes or until sugar begins to brown.
- Stir together yogurt and honey; serve over grapefruit.
